It's important to note that the events currently taking place with Entellium has nothing to do with the SaaS model and everything to do with the way the company was run. As a former Employee, I still believe in the hosted model as a low up-front cost, easy deployment, and completely safe alternative for your data compared to the heavy infrastructure on-premise option.
One mistake that many companies make when evaluating CRM software is that they only consider the up front cost to purchase on-premise software. My belief is that if you weigh the cost to purchase, cost to add the necessary hardware, and the necessary IT costs, not to mention the upgrades down the road(yes, you will want them when it includes that bug fix or feature you can't stand not having), you will start to see how both options have very similar long term TCO.
Your IT department is responsible for backing up your data, and if you choose a SaaS provider you should ensure that they have the ability for you to back up your data at your will. Entellium offers this but some do not. SaaS does not eliminate data responsibility, just look at your pop email account for a "SaaS" example. If Yahoo suddenly shut their doors, guess what happens to your email?

Entellium
Linking the fraud at Entellium to the SaaS model is ridiculous. This type of fraud can happen in any business.

A new home?
With the recent events in Seattle and all the crazy news that came with it people may wonder what will happen to all the Entellium customer and employees who are trapped in a terrible situation. So far I'm surprised only one vendor has issued a release on these topics. CRM vendor Salesboom.com issued a release today offering Entellium customers free data migration and job opportunities to the staff affected by these events. Whatever comtinues to come from these events I hope that the customers and staff of Entellium are affected as little as possible.
